Homemade french silk pie

For the last 2 years, I have made homemade pies for Thanksgiving. Mostly on account of the fact that I am too stubborn and cheap to go out and buy pies. Unless everyone is lying to me, this recipe is scrumptiously delicious. I wouldn’t know because I don’t like pie. I just make it for everyone else’s enjoyment 🙂 It’s from The Pioneer Woman, so how could it not be amazing?

A word of advice: do not attempt this without a handy stand mixer. The first year, I made it with my little hand mixer. This resulted in me standing with it in my hand for 20 MINUTES. I got smart and borrowed my mom’s Kitchenaid mixer this year and I was able to make 2 pies in the time it took me to make 1 before.

Yes, I made the chocolate curls myself. For some reason this year they were a bit more difficult than last, but I think I may have spread the chocolate a bit too thick.

Don’t forget your adorable baking assistant. Bean helped me out immensely by doing “The Mixer Dance” aka shimmy and shaking around in a circle while the mixer did it’s job.
