I can’t believe it’s gluten free: jalapeño corn muffin recipe

I was diagnosed with Hypothyroidism WAY back when I got pregnant with Bean. Little did I know how misinformed the medical community was about this condition. Thank goodness a friend of mine recently opened my eyes to how serious it is. I found out that I should have been on a gluten free diet the day I was diagnosed, over TWO YEARS AGO. No wonder I have been in a constant battle with my weight, energy, and mood ever since.

Just when I was starting to get in a comfortable routine of cooking and baking, I had to learn a whole different way of life. It was incredibly intimidating to say the least. After two failed gluten-free baking experiences, I was incredibly proud of how these turned out. I think I finally realized my mistake (which I’ll go into detail with below).

Last weekend when my brother was in town, I hosted a small dinner gathering at our house for my siblings and I. I gave my brother a few (sneaky, gluten-free friendly) dinner options and he chose a white bean chicken chili. Who can eat chili without cornbread? Not me. So off to Pinterest I went, in search of a Bre-healthy corn bread recipe. Holy cow this has got to be the best one out there.

Gluten Free Jalapeño Cornbread Muffins

Ingredients:

  • 3 tablespoons melted butter
  • 1/3 cup pumpkin puree
  • 1/4 cup honey
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 cup low-fat buttermilk
  • 1 cup corn meal
  • 1 cup gluten-free flour blend (I used Pillsbury)
  • 1/2 teaspoon finely ground sea salt
  • 1/2 teaspoon baking soda
  • 2 jalapeños, divided

Directions:

Visit Minimalist Baker for detailed instructions. My secret tip for gluten free baking? Make sure all of your ingredients are room temperature, especially the egg and buttermilk. For the egg, I placed it in a bowl of hot water for a couple minutes to bring it to room temperature. For the buttermilk, I microwaved it for about 30 seconds at a time, watching closely, until I felt that it was room temp. I’m sure this goes for all baking, but especially gluten free. I was so proud when they got all puffed up on top 🙂

In the end everyone loved them, including my non-gluten free siblings.     It's amazing how the gluten free diet can make such a difference for Hypothyroidism. One of my best friends has it and struggled with her weight all through high school. Nothing she did changed a thing (she tried all kinds of diets and lots of working out). Then about a year ago she started a gluten free vegan diet and literally lost 50 lbs in 2 months. I just wish she had known about the change it would have made sooner!

  2. Holy cow, wow! Hope it works that well for me! Only been on it for 7 days but, without changing anything else, lost 5 pounds. That's the sad thing about hypothyroidism, even doctors are kind of stumped about it. I only discovered how serious a condition it really is and how to help treat it in addition to medication with my own research.

  3. I went gluten-free this year as well – I had chronic migraines as well as other neurological symptoms I didn't want to take meds for. It has been a learning curve, but wow. I have never felt better. I hope that your thyroid issues clear up. I've heard it definitely can with this diet,
