REESE’S Miniatures Peanut Butter Cookie Bites Recipe

This Reese’s Miniatures Peanut Butter Cookie Bites recipe uses a miniature muffin tin and a twist on a classic peanut butter cookie recipe from the 1960s!

If you know me in real life, you would know that I am obsessed with all things Reese’s.

There’s nothing better than pulling one out of the freezer (because that’s the best way to eat them in my opinion) and biting into the perfect mixture of peanut butter and chocolate.

I combined my love of Reese’s with a classic recipe for a unique and easy-to-eat sweet treat!

I put a little twist on a classic family recipe from a church cookbook that was handed down to me by my mom.

The cookbook dates all the way back to 1967.

Reese’s Miniatures Peanut Butter Cookie Bites

You might be wondering… what is the best peanut butter for this recipe?

For soft and chewy cookie bite, the best peanut butter for this recipe is a good old, processed creamy peanut butter.

My personal favorite is Creamy Skippy.

You might be wondering… can I use natural peanut butter for this recipe?

Short answer: yes.

Long answer: you will probably end up with drier, more crumbly cookie bites.

If that’s your thing, or if you want to up the “health factor”, go for it. But we are talking about Reese’s cookie bites, so… 😉

Step One: Cream together the shortening, PB, and sugars

Preheat your oven to 375°.

Using either a stand mixer, hand mixer, or manually by hand, cream together the shortening, peanut butter, and both sugars.

Step Two: Add in the dry ingredients

Sift together the flour, baking soda, and salt in a bowl.

Then, slowly add the dry ingredients to the peanut butter/sugar mixture blending as you add. Don’t over mix.

Step Three: Mix in the egg and vanilla

Add your egg and vanilla to the dough and mix well.

It’s normal for the mixture to feel slightly crumbly.

Step Four: form your cookie dough balls

Roll the peanut butter cookie dough into balls approx. 1 to 1 1/2″ in diameter. Then, roll each ball in white sugar.

Step Five: Bake the peanut butter cookie dough balls

Place the sugar dipped cookie dough balls in a miniature muffin tin. Bake at 375° for 8-10 minutes.

I have an electric oven that tends to take longer than others, so I baked for the full 10 minutes.

While you’re waiting for those to bake, unwrap one REESE’s mini for each cookie dough ball.

Step Six: Add the Reese’s Miniatures

Once your cookie dough balls are almost completely baked, pull the muffin tin out of the oven and immediately start pressing one Reese’s miniature into each ball of dough.

Put the tin back into the oven for an additional 1-2 minutes to help set the Reese’s into the cookie bites.

Exercise your will power and make sure you let them cool entirely before removing them from the pan.

They will fall apart if you try to take them out too soon.

I’m telling ya, if you like peanut butter blossoms you will love these!

Everyone that has tried them has loved them. I think it’s safe to say, this recipe is now a new family favorite 😀

Reese's Miniatures Peanut Butter Cookie Bites

Ingredients

  • 1 bag of REESE’S miniatures (12 oz size)
  • 1/2 cup shortening
  • 1/2 cup creamy peanut butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar 
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 3/4 cup flour
  • 1 egg
  • 1 tsp vanilla

Instructions

    1. Preheat your oven to 375°. Cream together the shortening, peanut butter, and both sugars.
    2. Sift together the flour, baking soda, and salt. Then, blend in the dry ingredients.
    3. Add your egg and vanilla and mix well. Mixture will be slightly crumbly.
    4. Form the dough into balls approx. 1 to 1 1/2″ in diameter. Roll in sugar.
    5. Place the dough balls in a miniature muffin tin. Bake at 375° for 8-10 minutes. While you’re waiting, make sure you unwrap your REESE’s miniatures.
    6. Pull the pan out of the oven and immediately start pressing one REESE’S miniature into each ball of dough.
    7. Put them back into the oven for 1-2 minutes to help set the REESE’S into the bites. Let them cool completely before removing from the muffin tin.

Notes

Don't over bake your cookie bites, remember they will need to go back in the oven for a few minutes once you insert the Reese's!
